I have a 2000 f-250 with the 7.3L diesel engine and am wondering what mods i should get so I can have descent mpg and have that ability to tow, play, and cruise around town taking off fast?

Assuming you have a bone stock truck right now...here's what I'd suggest you get in order of importance:
1. Gauges - to monitor exhaust gas temp (egt), boost, and tranny temp.
2. Full 4 inch exhaust (including downpipe).
3. Upgraded air intake (NAPA 6637 filter works well).
4. Custom burned chip from DP Tuner or TWildman.

Any MPG gain that can be had, about 0.5 to 1.5 mpg increase, will be more than offset by the increased use of your right foot!
