The plastic on my headlight assembly is getting pretty yellow. Will the 2003 headlight assembly fit on my 2001?

It should be a direct swap.

Yes, 02-04 lights are a direct swap. Or with a little more work, (upgrade harness and a little modifying of the header panel) you can install the 05-07 lights.
