How to tell what has been done

So I a newb to the forums and diesels in general. Just picked up a 2004 F350 6.0L crew cab and I'm curious as to what's been done to the truck.

Is there a way to tell if it's had the ARP studs installed?

Is there a way to tell if it has had the EGR delete installed?

What things under the hood should I be looking at closely on a regular basis, I assume coolant level, but anything else I should be eyeballing?

If it has studs, you will see a bolt and nut where the Head Bolts goes. Don't know about the EGR Delete.
