It does sound like it's running a little too hot. It should be between 60-80 deg above the ambient temp. That's normal for a 99-03 7.3L. Running synth along with the 6.0 cooler should help. Don't rely solely on what the fluid looks/smells like. The hotter the fluid gets, the less life it has left in it, especially petro based ATF.
